Try this Peach and Cucumber Salad with Feta for a refreshing, fast and healthy meal anytime of the day! Juicy peaches are tossed with crisp cucumbers and creamy feta then drizzled with olive oil – it’s summer on a plate!
When it’s too hot to turn on the oven or I’m feeling downright lazy, I turn to salads. But not those wimpy side salads you get at restaurants that are covered in ranch dressing. No, those are digesting and do not deserve to grace your mouth. I’m talking salads that are complex in flavor and utilize the best of the season’s produce.
With summer in full swing, you have tons of fresh options to choose from. As of right now, I’m digging sweet crisp cucumbers and juicy peaches. I don’t know what made me think to combine them together, except I’m so glad I did.
This Peach and Cucumber Salad with Feta would be delicious alongside grilled chicken or steak or for a vegetarian version, you can toss it with quinoa. I love how the salty feta complements the refreshing cucumbers and floral peaches – it tastes like warm summer nights and cool dips into the lake. A simple drizzle of olive oil is all that’s needed to dress up this salad.
I have a feeling this Peach and Cucumber Salad will be on repeat until the temperatures cool down and I’m not complaining one bit. Enjoy!
