We are on week three of #soupalooza and I’ve been having tons of fun coming up with new recipes. It seems I have a tendency toward pureed soups – what can I say? The immersion blender is my favorite tool to use in the kitchen, minus that time when my thumb got caught in the blades. Lesson to note: Don’t try to scrap out any extra food with your fingers while the immersion blender is still plugged in. Bad idea with a capitol B. Anyways, enough about my stupidity lets talk about this Apple Beet Soup with Coconut Cream.
Beets are my new favorite obsession. I love their bright red color and earthy taste that goes well in an array of dishes from savory to sweet.
This Apple Beet Soup with Coconut Cream uses beets that are already cooked to cut down on time – 25 min from start to finish. You can roast your own beets or find them steamed and packaged in most supermarkets. I chose Honey Crisp apples for this recipe, which is sweet and tart. However, you can also use Granny Smith or Golden Delicious. One last thing – if you don’t like the taste of coconut, you can replace it with cashew cream or yogurt.
If I were to describe this soup I would say it pops with brightness, has a note of honey like sweetness and a tinge of earthiness. The pinkish color perks up a cold gray day and makes you believe that summer is on the horizon. Enjoy!

- 1 teaspoon, olive oil
- 1 shallot, diced
- 1 garlic clove, diced
- 1 honey crisp apple, peeled, cored and chopped
- 8.8 oz cooked beets
- ½ teaspoon fresh ginger, minced
- 4 cups vegetable broth
- ⅓ cup water
- ⅛ cup coconut cream
- In a heavy bottom pot, sauté shallot in olive oil until soft and translucent. Add in diced garlic, apple cooked beets and ginger. Pour in 4 cups vegetable broth and water. Simmer for 25 minutes, or until apples are soft.
- Puree with a handheld blender into a creamy consistency. Ladle into three bowls and serve with a swirl of coconut cream.
