Juggling a side business with a full time job is wonderfully exhausting but exhausting all the less.
The past week I went from Winthrop, WA to Bainbridge Island to Portland, OR and finally back home. I thought about preparing a few post beforehand to ensure there wasn’t a lull in content. But, my brain wasn’t mentally into the idea and I took that as a sign to direct my focus elsewhere.
The first thing I made after my break from the kitchen was these Strawberry Balsamic Popsicles. It’s supposed to be extra hot this week and I thought they would be the perfect cure.
Bursting with fresh strawberry flavor and tangy balsamic vinegar, these Popsicles are a grownup twist on a classic.Vanilla yogurt, strawberries, milk, honey and balsamic vinegar – the ingredient list couldn’t get any simpler or delicious. Enjoy!

- 1 cup vanilla yogurt
- ¼ cup milk
- 1 tablespoon honey
- 1½ cups strawberries, sliced
- ½ cup balsamic vinegar.
- In a high speed blender, blend together yogurt, milk, honey and strawberries, until smooth. Pour into popsicles mold.
- Heat balsamic vinegar in a heavy bottom saucepan, until it barely coats the back of a spoon, about 5 min. Swirl balsamic vinegar in each popsicle mixture. Freeze overnight.
