Raw Chocolate Truffles. Bare with me for a moment because the date train is still raging on. I can’t help it, they taste like burnt caramel. I understand if you are weary that a fruit can indeed be dessert. It goes again human nature or something. However, there are a plethora of health benefits to wonderfully sweet dates. You want to hear what they are? Of course you do.
Dates are rich in fiber dietary fiber, vitamin A, iron, potassium and calcium. They are a nutritional power house. Now imagine if you can pack that much goodness in a dessert. Guess what? You can! These Raw Chocolate Truffles are made with three ingredients; coconut butter, coca powder and dates. A short ingredient list also means short prep time. You will get your chocolate fix in under three minutes. Sounds like a win, to me!
- 10-15 good quality soft dates
- 2 tbsp unsweetened cocoa powder
- 2 tbsp coconut oil
- Coca powder to roll the truffles in
- De-seed the dates and process them with cocoa powder into a smooth paste in your food processor. Once done, scoop small bits out with a spoon and roll it between your palm to make truffles. Roll them over some unsweetened cocoa and store in an air-tight container.
