Coffee Dark Chocolate Banana Bread screams class and sophistication.  My mom is a horrible cook, don’t worry she will attest to that as well, but she can make awesome banana bread.  I have no idea what her secret is because she doesn’t follow a recipe.  My mom likes to throw ingredients into a bowl and go on blind luck.  Chocolate chips always make an appearance though.  Specifically dark chocolate, which we both share a mutual love for.

Since this Coffee Dark Chocolate Banana Bread has half whole-wheat flour in it AND coffee, I am declaring it perfectly suitable for breakfast.  It’s not too sweet, has a hint of caramel flavor and a slight bitterness from the dark chocolate.  Not to toot my own horn but this banana break is knock your socks off good. Unlike my mom, I wrote this recipe down so everybody can enjoy it.

  1. 2 bananas
  2. 1 cup all-purpose flour
  3. 1 1/3 cup whole wheat flour
  4. 1/2 teaspoon salt
  5. 1 teaspoon baking soda
  6. 8 tablespoons butter
  7. 1/2 cup white sugar
  8. 1/2 cup light brown sugar
  9. 2 eggs
  10. 1/3 cup latte
  11. 1 cup dark chocolate chunks
  1. Preheat oven to 400 degrees F.
  2. With the peels on, place banana's on a baking sheet and roast for 15 minutes until black. Once cool, peel banana's and mash them.
  3. Lower oven to 350 degrees F.
  4. In a small mixing bowl, sift together all-purpose flour, whole wheat flour,salt and baking soda.
  5. Cream the butter and both sugars in a stand mixer fitted with a paddle attachment until light and fluffy.
  6. Add eggs, mashed bananas and coffee into the sugar mixture.
  7. Fold in dry ingredients and dark chocolate chunks.
  8. Pour batter into a greased 8 by 10 loaf pan.
  9. Bake for 1 hour or until golden brown on top.
  1. Optional: If you dont have a latte on hand, then pour coffee and milk into a measuring cup until you reach 1/3 cup.

    My mom can’t cook either but, you know…she did make a good banana bread, come to think of it! No dark chocolate chunks or coffee bits, but now I probably won’t be able to make banana bread without those after seeing this!

    I’m not sure if it was that my mom COULDNT cook or that she just didnt want to, because she’d randomly have amazingly perfect recipes out of no where. I love, love, love coffee, so I extra love it in a delicious banana bread!

    I think chocolate should be required in banana bread! It ALWAYS makes it better. I haven’t tried coffee but I’m thinking maybe that should be required too. So glad you recorded this one (unlike your mom!) so I can give it a try.
