The cheese withdrawals have kicked into high gear. No joke, I go to sleep dreaming about grilled cheese sandwiches, which is why I am posting this recipe. If I can’t eat it at least I can stare with longing. I made this Pear, Arugula and Prosciutto Grilled Cheese last April for The Capitol Hill Times. The arugula adds a peppery bite that is counterbalanced by the sweet pear. You will never look at a regular old grilled cheese the same way again. - 2 thick slices of white bread
- 1 pear, cut into thin slices
- 3 pieces of prosciutto
- 2 slices of gouda
- Handful of arugula
- ½ teaspoon butter
- Preheat skillet over medium high. Butter one side of a slice of bread. Place bread butter side down onto skillet and add, gouda, pear, prosciutto and arugula. Butter a second slice of bread and place butter side up on top of sandwich. Grill until lightly browned.
