Oatmeal is my go to breakfast in the morning. It’s quick, easy, and there are endless variations to mask the bland taste. Nonetheless, sometimes I want to switch it up and what better way than with Breakfast Calzones.
Just like oatmeal there are endless variations to this recipe. I went with vegetables only because I am trying to wean myself off meat. In case you’re wondering why, I met a mommy pig last weekend and promptly fell in love. Nothing that cute should be slaughtered no matter how delicious it is. There are always two viewpoints though, and I am not saying one is right over the other. It’s just my reasoning. Also, I am Jewish so I really shouldn’t be eating pork anyways. Moving on, these Breakfast Calzones are a non-recipe recipe. The only thing I suggest using ingredient wise is scrambled eggs and pizza dough, everything else is up to you. Bacon? Go for it. Chorizo with black beans and rice? Make your breakfast into a morning fiesta. I have outlined the basic gist of the recipe below. Have fun with it and mix up your morning routine. Enjoy!
- 15 oz pizza dough
- 6 eggs
- ⅛ cup milk
- Preheat oven to 400 degrees F
- In a small bowl, whisk the eggs with the milk. Pour into a skillet over low medium heat. Scramble until eggs are firm but still moist. Set aside.
- Prepare your additional ingredients and set aside.
- Pinch off 5 oz of pizza dough and with a rolling pin, stretch the dough into a circle. Place your ingredients onto half of the circle, fold over the other half of the dough and secure edges. Repeat until there is no more dough left. Bake for 15 minutes on a lightly greased cookie sheet until calzones are golden brown.
