Bamboo sits above Subway, overlooking the hustle and bustle of 15th avenue in Capitol Hill. On colder winters nights, when leaving your apartment leaves your toes numb and your lips blue, Pho chases away the chill.  Back in 2008, I had the privilege to visit Vietnam where I discovered my love for the aromatic broth.  Spices like clove, star anise, coriander seed and cinnamon are usually wrapped in cheesecloth and steeped for several hours in the soup.

Pho at Bamboo is the closest I have tasted to the real thing.  A plate full of Thai basil, jalapenos, lime wedges and bean sprouts come on the side, ready to add another dimension of flavor.  There are several different options of Pho to choose from. My tried and true favorite is the Chicken and Veggie Noodle Soup ($8).  I always add a dash of hoisin sauce for sweetness.  Bamboo doesn’t exclusively serve Pho but it is the only dish worth mentioning. The rice and meat entrée’s lack a certain je ne sais quoi. If you are in the mood for a caffeine jolt, try the Vietnamese coffee ($3). It’s made with sweetened condensed milk, super addicting.

    that pho looks amazing! I haven’t had pho is so long – like 3 years. now I NEED some in my life. STAT. yum :)
